  1. In a deep bowl, mix the previously sifted flour with the yeast. Add cocoa, sugar, coffee and mix. Add milk, eggs and previously melted butter.
  2. Beat (with electric whisk or by hand) until mixture is smooth.
  3. Let stand for five minutes and beat again.
  4. Preheat oven to 180 ºC. Place a container of water on the oven tray to prevent the sponge cake from drying out.
  5. Grease and flour a mold. Pour in batter and bake for approximately 40 minutes.

Coffee sponge with nuts

Ingredients

  • Nuts (to taste).
  • 3 medium eggs (180 g).
  • A few drops of vanilla extract.
  • 2 cups of flour (200 g).
  • 2 butter bars (150 g).
  • ¾ cup of brown sugar (80 g).
  • 1 teaspoon of baking powder (5 g).
  • 1 tablespoon of instant coffee mixed with a little water (10 g).

Preparation

  1. Preheat oven to 180 ºC.
  2. Grease and flour a mold of sponge cake.
  3. In a deep bowl, mix the sugar and butter, which should be at room temperature. Beat until you get a cream.
  4. Add eggs one by one and continue beating.
  5. Add vanilla essence, beat until mixture is uniform.
  6. Add the previously sifted flour and yeast to avoid small hardened balls. Mix until there are no lumps.
  7. Add the nuts and coffee dissolved in water.
  8. Pour batter into mold and bake for approximately 35 to 40 minutes. To find out when the sponge cake is ready, insert a toothpick into it. It should come out completely clean.

Coffee and chocolate sponge

The combination of these two ingredients is just perfect.

Ingredients

  • 1 cup of flour (200 g).
  • 1 cup of sugar (200 g).
  • 150 grams of butter.
  • 4 medium eggs (240 g).
  • 1/2 cup of milk (50 ml).
  • 4 tablespoons of instant coffee (50 ml).
  • 1 teaspoon of baking powder (5 g).
  • 100 grams of chocolate bar.

Preparation

  1. Preheat oven to 180 ºC.
  2. Grease and flour a mold for the sponge cake  (you can also sprinkle cocoa instead of flour).
  3. In a deep bowl, place the butter, which should be at room temperature, and the sugar. Beat until you get a spongy mixture.
  4. Add the eggs one by one and continue beating  (wait until the egg is well integrated before placing the next one).
  5. Mix the coffee with the milk and add to the preparation.
  6. Melt the chocolate in a bain-marie and add to the preparation  (wait about five minutes so that it is not too hot).
  7. Sift the flour with the yeast and incorporate into the preparation with gentle movements.
  8. Pour the batter into the mold and bake for about 40 minutes.

You can prepare a chocolate icing for this delicious coffee sponge.  To do this, put 100 grams of cream in a small saucepan and bring to a boil.

After extinguishing the heat, add 100 grams of chocolate bar cut into pieces and a piece of butter. Stir everything very well until the chocolate is well melted. Finally, pour the icing over the sponge cake.
