White garlic cream is a dish with a very mild flavor and texture. Like gazpacho, it’s a meal that’s served cold, so it’s much more recurrent during the summer.

It is a recipe with greater consistency than gazpacho, however, depending on the taste of each person, it can be made more or less thick.

Despite the reputation that garlic can have as a bad breath food, a good garlic cream accompanied by fresh vegetables with a high water content will not leave traces of halitosis. So there is no excuse, prepare this wonder today!

Almonds in white garlic cream

The garlic cream that we will teach you next has a very pleasant taste, as the main ingredient is white garlic, which is a milder variety of this food; this is a big advantage when combined with other ingredients and, of course, also when it comes to seasoning the dish.

Ingredients (for 2 people)

  • Water
  • salt to taste
  • 1 ½ cup almonds (210 g)
  • 4 cloves of white garlic
  • 1 cup of breadcrumbs (100 g)
  • 2 cups of bread crumbs (220 g)
  • Olive oil (the amount required)
  • Apple vinegar (the amount needed)
  • Optional: ham, bacon, grapes, melon (to accompany)

Preparation

  1. First, put the breadcrumbs in a bowl and soak for about 15 or 20 minutes in water.
  2. Then peel and chop the garlic into thin slices. Then process the garlic with the breadcrumbs and set aside.
  3. Peel the almonds and place them in another bowl. Pour in boiling water and let it soak for a few minutes. This way, it will be possible to remove the brown cover more easily.
  4. In a blender, place the almonds, garlic, breadcrumbs, a pinch of vinegar and another pinch of oil. Beat everything on medium speed for a few minutes.
  5. Salt and beat again for 1 minute. If desired, you can add a little more oil to give more consistency to the cream.
  6. Then place the mixture in a container with a lid and refrigerate for at least an hour.
  7. Once cooled, you can serve the white garlic cream with any accompaniment you like: strips of ham, pieces of bacon, grated cheese, grapes or a slice of melon.

Ingredients (for 2 people)

  • 1 head of fresh red garlic
  • 1 box of unflavored gelatin
  • 5 tablespoons of cream (75 ml)
  • ½ cup of beef broth (100 ml)
  • 2 tablespoons of squid ink (30 ml)
  • Condiments: salt, three peppers

Preparation

  1. First, peel and cut the garlic into thin slices.
  2. Then put the broth to heat in a saucepan over medium heat.
  3. Dissolve gelatin in a bowl of cold water.
  4. Before the broth reaches the boiling point, add the dissolved gelatin and stir with slow, involving movements.
  5. When the broth starts to boil, reduce the intensity of the heat and add the squid ink.
  6. Finally, add the cream and process everything, with the help of a blender, until you get a homogeneous mixture. You will get a garlic cream with a more intense flavor than before, given the variety of garlic used.
  7. Salt to taste and serve immediately.

Garlic cream is usually served warm as its flavor is much better appreciated. However, it can also be served cold during the hottest months of the year if we so wish. In fact, the so-called “ajoblanco” is served in southern Spain. But when it comes to cooking, we can often change recipes and dictate the rules.
